It is a guide, containing all the information necessary to master vegan cooking, with explanations of the "why's" and "what if's" behind the recipes, which allows the reader to learn how to improvise with confidence. Vicki started teaching vegetarian cooking in the mid 70's, and in the 80's began teaching only vegan cooking. She a Ringling fine art graduate who also has a batchlors of science in holistic nutrition and understands how to stay healthy and satisfied with plant-based food over time. Vicki's goal in writing this book was to mentor and empower anyone who wants to become vegan or add vegan food to their diet as she has done in her cooking classes for years.
